Easy Shortbread Biscuits





Ingredients

2oz/55g caster sugar
4oz/125g butter
6oz/180g plain flour


Preheat oven to 190C/Gas 5.


Beat the butter and the sugar together until smooth, then stir in the flour a little at a time, to make a smooth paste.
Turn the mixture onto a clean surface and carefully roll out to a thickness of about 1cm.
Cut into fingers (Use a long non-serrated knife) and place onto a baking tray (I place a sheet of greaseproof paper on the baking tray).  Leave in the fridge for 15-20 minutes.
Mark the biscuits with a fork and bake in the oven for approx 15 minutes, or until pale golden-brown. (*Tip take them out when they are 'just starting to colour' if you want a softer crumbly biscuit.)
Sprinkle with a little castor sugar and set aside to cool.

These biscuits are great with a coffee, tea or hot chocolate. They are also fantastic with good vanilla ice cream! :)
